即使对于山东人,这道当地名菜也是相当有挑战性。猪大肠水焯后油炸,再向其中灌入十余味佐料后微火爆炒。因此这道菜酸、甜、香、辣、咸五味俱全,大肠肉质地柔嫩。对于重口味的鲁菜,只有地中海地区的葡萄酒才能搭配这些复杂的口感。地中海葡萄酒同样充满各种香料的味道,具有厚实丰腴的丹宁,才能够与鲁菜和谐共处。张翛翰,2013年4月

Nine-coiled Large Intestine with Mediterranean
It is even a challenging job for some of the local Shandongnese to try this famous dish. Large intestines are first boiled in water and then fried in oil, and then fried again with more than ten spices. The dish is a complex array of different flavours, while the intestines are soft and tender.
