Shan County is located in south-western Shandong, and their goat soup is definitely the best from this cuisine. The goat must be a three year old and cooked immediately. The goat meat and offal are cooked together with more than a dozen flavourings, herbs and spices, and the bones are added to enhance the flavour. A great match with the complexity of this dish is a Châteauneuf-du-Pape, which is a blend of up to 13 different grape varieties.
